Description
Salad or Bust Downtown is a fresh-focused spot at 8 E Bijou St in Colorado Springs. The business began as a food truck salad bar and now runs two locations, this downtown shop and a counter inside the Ivywild School. The menu centers on salads, hoagies, Buddha bowls, açaí bowls, smoothies, charcuterie boards and hummus plates, with choices meant to suit a range of dietary needs.
The team says it partners with local businesses, including Harvest Moon Baking Company, and offers catering and online ordering. Weekend brunch is served on Saturdays and Sundays.
