Colorado Food Guide
Colorado's food story runs through its valleys as much as its cities. In Pueblo, the Pueblo chile, a pepper developed in the 1990s by CSU professor Michael Bartolo, goes into the green chile that smothers the slopper, an open-faced burger usually served in a bowl with onions and oyster crackers. Its origin is disputed, with Gray's Coors Tavern claiming the original, and the Chile & Frijoles Festival fills Union Avenue every September. On the Western Slope, Palisade is known for peaches, with a season that peaks in late July and early August, and Olathe and Montrose bring in sweet corn from mid-July into early September. Rocky Ford melons ripen in the Arkansas Valley late in summer, and Cedaredge's orchards anchor an early-October apple festival.
The figures here come from our directory as of October 2026, which lists 16,614 places statewide. Mexican leads with 1,827 listings, followed by Cafes & Coffee at 1,516, Bakery & Desserts at 1,376, and Fast Food at 1,206. Restaurants (1,095), Bars & Nightlife (1,048), Pizza (981), American (813), Bar & Grill (735), Brewery & Distillery (642), Breakfast & Brunch (637), and Sushi & Japanese (551) round out the larger groups. About 71 percent of listings are independent, so most of what you will find is not a chain.
The numbers say plenty about how people eat here. Fast food and quick coffee are common, and 3,298 listings offer delivery, so plenty of meals travel. Sitting down is easy too: 1,228 places have outdoor seating, 1,266 run a happy hour, 1,246 have a full bar, and 535 host live music. The dishes show up in the listings as well. Green chile appears in 547 of them, breakfast burritos in 551, tacos in 1,252, and barbecue in 654. Thirteen mention the slopper, and ten mention Rocky Mountain oysters, a fried ranching-era dish that has its own day each October 5. Plan ahead, though: only 4,066 listings post hours, while 13,775 link a website and 6,474 link a menu, so a quick check of a place's site is often the surest way to confirm it is open.
Beyond the usual dining rooms, the directory counts 199 food trucks and 17 food halls, among them Denver Union Station, Stanley Marketplace, and Denver Milk Market. Beer has deep roots here too. The Great American Beer Festival began in Boulder in 1982 and now runs in Denver each October. Colorado brewers raised production nearly 10 percent in 2025, even with a net loss of 33 breweries across the state. Our directory lists 642 breweries and distilleries, and 879 listings mention craft beer, which gives you plenty of room to build a day around a pint.

Regional dishes and drinks to try
Colorado green chile and Pueblo chile
In Colorado, "chile" means a roasted-pepper sauce, red or green depending on ripeness, made with onions, garlic, broth, spices and pork. It is served over burritos, enchiladas, eggs and fries. The Pueblo pepper measures roughly 5,000-20,000 Scoville units, compared with 500-3,000 for Hatch, New Mexico chiles.
The slopper
The slopper is an open-faced burger smothered in green chile, usually served in a bowl and often topped with onions and oyster crackers. Gray's Coors Tavern in Pueblo claims the original, from the 1950s, while Star Bar disputes that.
Palisade peaches
These Western Slope peaches owe their flavor to "hot days and cool nights," according to a Palisade grower. The season runs roughly May to October, with a peak in late July to early August.
Rocky Ford melons
Cantaloupes, honeydews and watermelons grow in the Rocky Ford region of the Arkansas Valley, where big temperature swings and a dry climate are credited for their sweetness. They typically arrive in late summer.
