Description
Baja Chimayó is a locally owned taco shop inside the Bluebird Market Hall at 325 Blue River Parkway in Silverthorne. It is the sister location of Chimayo Grill in Dillon and opened in January 2022. The kitchen works from scratch, with Baja-style fish and shrimp hand-breaded to order.
The menu centers on tacos and burritos, with a rotating lineup that includes carne adovada, chicken tinga and pork carnitas, plus desserts. Many dishes are marked gluten-free or vegan, and the shop notes awareness of celiac disease and gluten sensitivity. Dine-in and takeout are both available.
