Description
Taqueria Cuevas is a JapaMex restaurant at 355 Goddard Ave in Ignacio, run by chef Oscar Cuevas and his wife Claudia. Oscar spent more than twenty years cooking in Japanese kitchens and also grew up cooking Mexican food, so the menu draws on both traditions. The couple started with a food truck in 2019 and opened the Ignacio restaurant in 2023.
The Mexican side includes al pastor and carne asada street tacos, burritos, tortas and smothered green chile. The Japanese side offers tonkatsu ramen, katsu, teriyaki and yakiniku plates, plus appetizers like gyoza and edamame. Breakfast is served on weekdays, and vegetarian and vegan options are available. Dine in, order takeout or delivery, or order online. The food truck still visits local farmers markets, a winery and private events.
