Chop

Chop is an American steakhouse with a French flair at 900 W Orman Ave in Pueblo, Colorado. The kitchen cooks USDA Prime steaks and can prepare a steak sous vide on request. The menu also includes French onion soup, escargot, baked brie, Maryland crab cakes, shrimp tempura and a rustic French bread basket with whipped honey truffle butter. Crème brûlée and chocolate mousse cake round out the dessert list.

The restaurant describes itself as a scratch kitchen and sources organic hydroponic vegetables through a partnership with Pueblo Diversified Industries. It sits on the Pueblo Community College campus, with an outdoor patio featuring gazebos, waterfalls and fire features. Chop also caters events, from weddings to corporate gatherings.
