Description
Omelets Etc. is a family-run breakfast and lunch restaurant on Mesa Ridge Parkway in Fountain, one of four locations in the Colorado Springs area. Juan and Robin Madera opened the first in 2010. The menu leans on American breakfast plates and Southwestern favorites, including huevos rancheros, breakfast burritos, chile rellenos and eggs, and smothered burritos topped with Juan's homemade green chile.
The kitchen also makes crepes, pancakes, waffles and French toast, plus platters with bacon, sausage, ham, hash browns and eggs any style. The restaurant says its sausage links come from a local farm. Takeout is available, and phone orders can be placed for pickup.
