Description
Edison's Ice Cream is an ice cream shop at 172 N College Ave in Old Town Fort Collins. It opened in the spring of 2025 as the flagship parlor, after the brand began with an ice cream cart and pint pickup from a local production kitchen. The founder started it so people with dairy intolerances could share in the family tradition of eating ice cream.
The menu centers on 12 signature flavors, including Double Oreo, Salted Honey, Lemon Bar, German Chocolate Brownie and Orange-Infused Olive Oil. Every flavor is gluten-free, and several are also dairy-free, such as Essential Chocolate, Mint Oreo and Strawberry Shortcake. Ice cream sandwiches and limited edition flavors round out the offerings. The shop also offers its ice cream cart for private events and catering. A second location is open in Greeley.
