William Oliver’s Publick House

William Oliver's Publick House is a neighborhood pub with three Colorado locations, built around a large whisky selection of more than 400 bottles from around the world. Its taps feature beer brewed in Colorado, and the gin, rum, vodka, brandy, absinthe and tequila all come from Colorado-owned companies. This location is at 201 N Public Road in Lafayette.

The menu leans heavily on hand-cut applewood smoked bacon, including a Pint of Bacon served in a pint glass with maple syrup, and bacon can be added to just about anything, cocktails included. Vegetarian and vegan options are available, among them a from-scratch vegetarian red-bean chili. The pub offers free WiFi, a leash-friendly dog patio, daily happy hour specials, online ordering and catering. It describes itself as a place for conversation, and it does not take reservations or phone calls.
