Description
Pollinator Chocolate is a small-batch chocolate maker founded in 2019 by Mark Burrows, based inside Cocoa Club at 786 Highway 133 in Carbondale, Colorado. The shop makes its own bars and bonbons, along with caramels, cacao nibs and roasted cacao beans, and the founder says the cacao comes from importers that guarantee farmers a living wage.
The cafe menu covers espresso drinks, matcha, chai and several hot chocolates, plus pastries and gluten-free donuts and burritos. Ice cream is now on offer too. The space also hosts events such as wine tastings and chocolate pairings, and private events can be arranged by phone.
