Colorado’s Rib and Chop House

Colorado's Rib and Chop House is a steakhouse at 5935 Dublin Blvd., Suite 190, in northeast Colorado Springs. The menu centers on aged Certified Angus Beef steaks, including a baseball cut top sirloin and a filet, along with baby back ribs that are marinated for 24 hours, slow-cooked, and finished on the grill with a smoky BBQ glaze. Lunch adds bison bacon burgers, French dips, cedar plank salmon, and specialty salads, and the bar pours handcrafted cocktails, local craft beers, and mocktails.

The restaurant began in Livingston, Montana, in 2001 and describes its approach as "Rocky Mountain Hospitality." It offers dine-in, takeout, delivery, online ordering, reservations, catering, and a happy hour. A private event space can host weddings, corporate meetings, and family gatherings, and weekly Air Force Academy coaches' shows are held here during the season.
