The Fort

The Fort sits at 19192 Highway 8 in Morrison and serves Rocky Mountain game and steaks in a historic adobe building. The dinner menu centers on American bison, with a buffalo flatiron steak, buffalo filet and a game plate pairing venison, buffalo sirloin and quail. Colorado beef cuts such as ribeye, New York strip and filet mignon are also offered. Appetizers include buffalo empanadas, bison tartare, smoked trout croquettes and Rocky Mountain oysters.

Beyond dinner, The Fort hosts private events, including full and half buyouts for weddings and corporate gatherings, along with a calendar of historical talks and storytelling programs. Catering, online ordering and reservations are available, and a kid's menu and drink menu are offered.
