Alchemy

Alchemy is a locally owned Irish-style pub on West Colorado Avenue in Colorado Springs' Old Colorado City. The bar pours a long list of Irish whiskeys, including Jameson, Powers and Redbreast bottlings, along with Irish beers and ciders, and signature cocktails such as the Irish Mule, Dublin Side Car and Irish Coffee.

The kitchen serves Irish-inspired comfort food, from Scotch eggs, poutine and curry chips to shepherd's pie, a house-made corned beef Reuben and a gluten-free fish and chips. The pub describes its cooking as built on locally sourced, seasonal ingredients. There is a large outdoor patio when the weather allows, and dogs are welcome there but not inside while the kitchen is open. Reservations aren't taken, so walk-ins are welcome; large groups can call ahead.
