Las Fajitas Mexican Restaurant is a family-owned spot that first opened in the Aurora area about 20 years ago. The Granados family comes from Jerecuaro in the Mexican state of Guanajuato, and the menu runs from fajitas and carne asada to chiles rellenos, enchiladas, burritos, tacos, chimichangas, seafood and desserts. Breakfast is served all day, with burritos, huevos rancheros and chorizo-and-egg plates.
There is a full bar with wines, beers and margaritas, plus a happy hour from 3 to 6 pm. Catering is available for events. This location is at 7450 S Gartrell Rd in Aurora, and the restaurant also serves the Castle Pines-Castle Rock area and Littleton.
