Spruce Cafe is the Pearl Parkway location of Spruce Confections, a Boulder bakery that began in 1992 when founder David Cohen started baking cookies in a friend's basement. The brand makes its scones, pastries, soups and breads from scratch each day in open kitchens, and also bakes cakes and cupcakes for celebrations.
