Spruce Confections is a Boulder bakery that began in 1992 with founder David Cohen baking cookies and delivering them to local coffee shops. The menu covers scones, croissants and other pastries, cookies and bars, coffee cakes, pies and quiche, plus soups, salads, sandwiches and breakfast burritos, with gluten-free scones, bars and tea breads among the options. The bakery says it makes everything in house each day, in open kitchens.
