Fringe

Fringe is a pizza restaurant at 2900 Valmont Rd in Boulder, built around Neapolitan-style pizza and shareable plates inspired by Southern Italian cooking. The kitchen works from scratch, and its pizza dough was developed over about a year using sourdough starters the owners have kept going since 2017. The menu also covers salads, pasta and entrees such as baked ziti and eggplant parmesan.

A self-pour tap wall offers 16 rotating beers and wines, and a happy hour runs daily. Fringe has indoor dining and a heated patio, plus takeout and online ordering. Vegan cheese and gluten-free crust are available as pizza options, and there is a kids cheese pizza. The restaurant asks parties of six or more to call ahead.
