Chez Thuy is a family-run Vietnamese restaurant at 2655 28th St in Boulder, serving the community since 1993. The kitchen draws on French, Chinese, Thai and Indonesian influences alongside its Vietnamese heritage, cooking with herbs and ingredients such as basil, lemongrass, tamarind, ginger, jicama, papaya, mango and pineapple.
