Description
The Colorado Pig Rig is a Denver barbecue operation that brings Kansas City-style, pork-centered cooking to events. The menu is built around sandwiches on brioche buns with pulled pork, brisket, chicken, smoked sausage or a veggie option, topped with slaw and finished with house KC, Carolina Gold or Spicy Texas sauces. Sides include slaw, baked beans, mac n cheese and chips.
The business started in 2014 with the Kriz brothers and has been led by David Sevcik since 2020. It offers food truck and buffet catering for weddings, corporate events, schools, graduations and private parties, and dietary restrictions can be accommodated with advance notice.
