Description
Bubu Republic is a bowl restaurant on the 16th Street Mall in Denver, built around the cooking of Chef Troy Guard. The menu offers chef-curated bowls such as the OG Colorado with grilled steak, roasted carrots and green chiles, the Thai with tiger shrimp and chilled rice noodles, and the Aloha Poke with sushi-grade tuna.
Guests can also build their own bowl by choosing a base, a protein, five ingredients and one of several house-made dressings. Proteins include grilled chicken, steak, organic tofu, salmon, tuna and shrimp. Online ordering and catering are available, including build-your-own bowl bars and boxed lunches for office meals and gatherings.
