The Easy Vegan is a plant-based food business based in Denver, run by owners Alexi Mandolini and Taylor Herbert. Their veg-forward cooking is meant for vegans and omnivores alike, and it ranges from casual street food to plated farm-to-table dinners. They have described their start as a twice-weekly pop-up in the university neighborhood of Denver.
You can find them at the City Park Farmer's Market on Saturdays and the South Pearl Street Farmer's Market on Sundays. A restaurant called Mother Other is planned to open in June 2026.
