Cofa Coffee

Cofa Coffee is a coffee shop at 40 Cove Blvd in Dillon, Colorado, set at the entrance to the Summit Cove neighborhood. It opened after the pandemic as a new take on the warm coffee house feel the area has long had, and it describes itself as an everything stop before a day on the hill, a work outing or a catch-up with friends.

The menu covers hot and cold coffee drinks, including lattes, cold brew, matcha and Thai lattes, chai drinks, Italian and French sodas, frappes and smoothies. For food, there are breakfast burritos, bagel and English muffin egg sandwiches with an impossible meat option, plus waffles, muffins, croissants, lemon bars and baklava.
