Cuisine of the Himalayas is a family-run restaurant at 1262 Bergen Pkwy in Evergreen, serving Nepalese, Indian and Tibetan dishes. The family says its recipes trace back to the Kathmandu Valley, and that it brought them to Colorado in 2001, opening the Evergreen restaurant in 2007.

The menu covers momos, Sherpa stew and chow mein alongside tandoori kabobs, masala, korma, vindaloo and biryani, with a range of naan and roti. Vegetarian and vegan dishes are well represented, and gluten-free options are available.
