Description
Cellar West Brewery is a small craft brewery with a tasting room at 778 W Baseline Rd in Lafayette, Colorado. Founder Zach Nichols started the company in 2016 in a North Boulder garage, focusing on Saison and barrel-aged Farmhouse Ale, and moved to Lafayette in 2018 for more seating and a larger brewhouse.
The brewery also runs a second taproom and kitchen in Erie, which opened in 2025. Its calendar mentions live music and visiting food trucks, and the website has a reservations link for booking a table.
