Moon Raccoon Baking Company is a micro-bakery run by co-owners and head bakers Zoe and Kate, making small-batch, scratch-made pastries with local grains and produce. The pair say they were inspired by viennoiserie they saw in European bakeries and wanted to recreate that style using Colorado fruit and flour.
