Clark & Co’s Distilling

Clark & Co's Distilling sits along a bend of the Colorado River in Palisade, set between pear and peach orchards. It opened in July 2022 and is run by the Clark family, whose orchard farm dates to 1897. The distillery makes more than 35 spirits in Palisade, including fruit brandies from the family's own fruit, moonshines, rum, vodka, bourbons, agave spirits and a butterfly pea flower gin.

The menu pairs the spirits with food such as burgers made with Colorado Angus beef, flatbreads, sandwiches, salads and appetizers, plus a kids menu and desserts. Cocktails, flights, beer and bottles to take home are also offered. Guests can sit on the shaded patio or in the rustic tasting room, and the site mentions distilling classes and tours.
