Omelets Etc is a family-run breakfast and lunch spot with four locations in the Colorado Springs area and Falcon. This location is at 11910 Tourmaline Dr in Peyton. Juan and Robin Madera opened the first restaurant on 8th Street in 2010, and the brand has grown from there.
The menu covers American breakfast plates alongside Mexican-influenced dishes like huevos rancheros, chorizo and eggs, and burritos smothered in homemade green chile, which the owners highlight as a signature. Pancakes, waffles, French toast, crepes and eggs Benedict round things out, and the sausage links are sourced from a local farm.
