The Food Truck Union

The Food Truck Union is a food truck collective of owners of Southern Colorado food trucks and trailers operating within Pueblo city limits. Because it is a food truck, locations can change, and the group invites people to contact individual trucks about visiting a workplace parking lot or private event. Groups planning an event of 100 or more can use a contact form to ask for a proposal with more trucks.

The member trucks cover a wide range, including wood-fired pizza, ceviche and birria, Indian dishes with fair food like funnel cakes, sandwiches and paninis, shaved ice, and flavored dirty sodas. The group describes a weekly Friday gathering at Mineral Palace Park from April through early November, rain or shine. Catering is available.
