Parshall Inn

Parshall Inn is a roadside diner and bar at 146 1st Ave in Parshall, Colorado, along Highway 40 between Hot Sulphur Springs and Kremmling. The building dates to 1950, and locals have long called it the "P.I." The kitchen turns out hamburgers, fresh salads, homemade soups and a range of sandwiches, plus nightly dinner specials that have included prime rib, fried chicken and seafood platters.

There is a full bar, and the place also has horseshoes, shuffleboard and pool for after a meal. The restaurant is closed on Tuesdays and offers takeout, so calling ahead is an easy way to have an order ready when time is short.
