PARC Aspen

PARC Aspen is a fine dining restaurant at 620 E Hyman Ave in downtown Aspen, run by proprietors Maryanne and Harley Sefton. Executive Chef Stefano Schiaffino combines French technique with his Peruvian heritage, building seasonal menus around Colorado ingredients such as elk loin, wagyu ribeye and organic king salmon. A separate bar menu offers a more casual take, including steak frites, and the dessert menu features crème brûlée and a soufflé.

The wine program lists more than 1,300 labels and has received Wine Spectator's Best of Award of Excellence, alongside a cocktail menu. Dinner is served Wednesday through Sunday, and reservations are accepted. The restaurant also offers catering and online ordering, plus private events including a chef's table for up to 12 guests, a bar buyout and a full restaurant buyout.
