Silverpeak Grill

Silverpeak Grill, which presents itself as 520 Grill, is an owner-operated restaurant at 520 E Cooper Ave in Aspen, Colorado. The kitchen is led by chef-owner Troy Selby, a New England Culinary Institute graduate, and the menu blends American, Latin American and Colorado influences in what the restaurant calls Mexi-Cali style.

The all-day menu covers tacos with carne asada, chicken, wahoo or shrimp, California burritos, quesadillas, Hana wraps, and burgers made with Angus beef, bison, turkey, chicken or a vegan patty, with a gluten-free bun available. There are also sandwiches such as a Cajun fried chicken sandwich and a Philly cheesesteak, plus soups, salads and rice bowls. Guests can dine in the casual dining room, sit on the patio, order takeout, or get delivery. Catering is available for office lunches, private dinners and events, including a build-your-own taco bar.
