Harding On Main is a restaurant at 605 Main St in downtown Cañon City, in the Harding Building on the 6th block. Chef Charlie Dolan opened it in 2025 with a menu that reinvents classic dishes with modern flair and global influences, and he sources from local farmers, ranchers and artisans.
His sister, Molly Dolan, runs the bar program and develops the craft cocktails, often using ingredients that overlap with the kitchen's. Dinner is served Tuesday through Saturday. Reservations are available online, and the restaurant also offers catering and online ordering.
