Beau Thai II is a family-run Thai restaurant at 1341 New Beale St in Castle Rock, Colorado, just west of I-25 at the Meadows Parkway exit. The owners trace their cooking to Nepal and say the Thai menu is influenced by Indian cuisine. It is the second Beau Thai, following the original in Evergreen.
The menu features dishes such as papaya salad, Thai red curry with coconut milk and bamboo shoots, pad cashew, and basil fish. Seafood and mixed vegetable stir-fries are also on offer, with options for meat or veggie in some dishes. The menu is available on the website.
