Chubbys is a Mexican restaurant at 1385 Santa Fe Dr in Denver, part of a family-run brand whose story the restaurant traces back to a burger drive-in that Stella Cordova bought and turned into a Mexican eatery. Her grandson Julian Cordova took over in 1984 and keeps the traditional recipes.
