Vegan Thai Co. is a Thai restaurant at 510 3rd Ave in Longmont that prepares traditional Thai recipes entirely plant-based. The kitchen is led by Chef Noi, who grew up in Pai, Thailand, and the website says the cooking draws on her memories of shopping for fresh vegetables at her hometown farmers market.

There are also soups like khao soi and tom yum, vegetable stir-fries, appetizers and salads, and mango sticky rice for dessert.
