Description

Brickhouse 737 is a restaurant at 737 Main St in Ouray, Colorado, serving contemporary American cuisine built around farm-fresh ingredients and dishes inspired by the owners' travels. Co-owners Chef Cory Sargent and Hans Vanderploeg opened it in 2016 and work with local farms, dairies, ranchers and wineries.

The menu moves from starters like smoked trout dip and shrimp and sweetcorn fritters to mains such as elk bolognese, braised short rib and grilled venison. The bar pours craft cocktails, and staff can suggest wine pairings. Seating is limited, so reservations are encouraged by phone, though walk-ins are welcome. Takeout is available.
