Prospector

Prospector Small Plates is a chef-driven kitchen and bar at 124 S Glasgow Ave in Rico, Colorado, set in the San Juan Mountains. The restaurant describes a relaxed, communal style of dining, with small plates meant to be passed around the table. It is led by Chef Eamonn O'Hara, who previously worked as Executive Sous Chef at the Hotel Bel-Air in Los Angeles.

The menu runs from house-made focaccia, garlic bread and soups to apps like edamame and grilled cauliflower, plus larger plates such as grilled chicken, flank steak, Atlantic salmon, Angus filet and a vegetable lasagna.
